Apple Oatmeal Muffins

The apple oatmeal muffins are super easy and delicious. There is no added sugar or butter. The muffins are naturally sweetened by the apples. For this recipe, I recommend using sweet apples such as Pink Lady, Gala, or Fuji apples.

Ingredients:

Makes 12


2 cups oat flour

1/4 tsp baking soda

2 tsp baking powder

1/4 cup non-fat Greek yogurt

2 eggs

4 tsp olive oil (or canola oil)

1 tsp vanilla extract

2 apples, shredded

1/4 cup brown sugar

2 tbs cinnamon



Steps:


1. Preheat oven to 350 degrees.


2. Time to make oat flour. Put 2 cups oats in a food processor or coffee grinder and grind until smooth. This should take around 20 seconds on high.


3. In a bowl add oat flour, baking soda, baking powder, and brown sugar


4. In a separate bowl beat 2 eggs, add yogurt, vanilla, and oil


5. Combine the wet ingredients with the dry.


6. Add your shredded apples to the mixture. You can shred them using a grater or you can put them in a food processor and pulse (you want there to still be small chunks. Don't blend until smooth).


7. In a small bowl add 1/4 cup oats, dash vanilla and 1 tsp honey. Mix until forms a nice crumble.

8. Grease your muffin tray and add the mixture evenly. Add the oat crumble to the top of the muffins.


9. Bake for 15-20 minutes and let cool for 10 minutes
