Cottage Cheese Latkes

These cottage cheese latkes are a family favourite. I grew up eating these at my grandmother's kitchen table. Lightly sprinkled with sugar, or topped with berries, my grandmother would have to cut me off! They're so good!

Cottage cheese latke ingredients:
Makes approx. 20
1 lb. cottage cheese (Any works)
1/2 cups all-purpose flour
2 eggs
2 tbsp sugar
1 tbsp oil (Canola recommended)
Pinch of salt
Steps:
1. Mix all ingredients together with a whisk.
2. Oil skillet and fry on low heat until lightly browned.
3. Turn over and fry on the other side.
4. When the edges are dry and the top glistens, they're done!
Toppings (optional)
Sugar
Berries or berry compote
Maple syrup
